How To Make Traditional Hongkong Claypot Chicken Recipe (煲仔雞飯) – Hong Kong is not only a shopping paradise for fashion lovers, but also a foodie haven. There are lots of local food you can taste in Hongkong. Not only noodles, or dumplings or seafood that you can eat, but the typical Hong Kong food that is influenced by Chinese cuisine also makes food hunters visit here

Claypot Rice will remind you of BIBIMBAP, Korea. Claypot Rice is a rice that is equipped with a wide variety of side dishes, such as pork/beef/chicken, sausage, mushrooms, vegetable and seasoned with garlic, onions, fish sauce, pepper, soy sauce. All ingredients will be mixed into one, then steamed/in-team and will produce the Rice team with an extraordinary flavor.

The special of this food is the very bottom rice. The flavors are more supple, slightly dry and slightly brown in color. So, you have to enjoy this Claypot Rice until it runs out.

Ingredients:

A- For the rice:

  • 300 g rice, washed until water runs clear
  • 420 ml water

B- For the marinate:

  • 500 g chicken, bone-in, cut into 4cm pieces
  • 1 teaspoon salt
  • 1 teaspoon sesame oil
  • 1 tablespoon oyster sauce
  • 1/4 teaspoon dark soy sauce
  • 1/4 teaspoon ground white pepper
  • 1 teaspoon sugar
  • 1 teaspoon cornflour
  • 1 tablespoon ginger, , finely chopped

C- For the drizzling sauce:

  • 1 tablespoon oyster sauce
  • 1/2 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon sesame oil
  • 1 1/2 tablespoons Shaoxing wine
  • 2 tablespoons water

D- Other ingredients

  • 1 Chinese sausage, cut into thin slices
  • 1 teaspoon salted fish, optional
  • 2 Shitake mushrooms
  • 1 stalk scallion

Instructions:

  1. Soak the dry Chinese mushroom in warm water for 20 minutes. Cut it into long, thin slices. Set aside.

  2. Cut the Chinese sausage into thin slices.

  3. Mix all the ingredients in B together in a bowl. Marinate for one hour in the refrigerator.

  4. Mix all the ingredients in C together.to make the sauce.

  5. Rinse the rice a few times until the water runs clear. Drain and transfer it into the clay pot.

  6. Add water into the rice.

  7. Simmer the rice over low heat with the lid on for 10 minutes.

  8. Spread the marinated chicken, salted fish (optional), and Chinese mushroom evenly on the surface of the rice.

  9. Drizzle the sauce on it and cover.

  10. Simmer over low heat for another 10 minutes.

  11. Garnish with spring onions and serve.
