Best Dessert Recipe: Skyr Yogurt Homemade From Iceland – Greek yogurt is rich in calcium, protein, and more creamy than regular yogurt is indeed increasingly popular. But it tastes, the popularity of Greek yogurt will soon be outdone by ‘ cousin ‘ who came from Iceland, namely skyr.
Basically, the Icelandic skyr is a cheese filtered milk without fat, for the people of Iceland is actually a traditional food daily, but recently some time lately began popular among interested health food.
How a sense of skyr? If compared with Greek yogurt, is more dense and not too sour, something like creme fraiche. Though technically , yogurt with different content of its nutrition value is almost the same.
Approximately 150 ml plain skyr contains about 100 calories, 17 grams protein, 0 grams of fat and 3 grams of carbohydrates. While Greek yogurt with the same amount of fat contain about 80 ml calories, 15 grams protein, 0 grams of fat and 4 grams of carbohydrates.
Sarah Pflugradt, American nutritionist, said on prevention.com, “nutrient content, good Greek yogurt or Icelandic skyr provides the same nutrients. The difference is only on flavor and texture, which one you like. ”
- 450g dried nettle leaves
- 3-4 cups filtered water
- 2-3tsp sea salt
Place the nettle leaves in a large pot; add enough water to just cover the leaves.
Bring to the boil; reduce the heat & simmer for 30 minutes.
Add the salt & stir until dissolved (this will break down the leaves & release the active enzyme).
Place a colander over a large bowl & line it with cheesecloth. Strain the nettle mixture.
