AYAM PERCIK (Malaysian Roasted Spiced Chicken) – Ayam Percik is chicken grilled chicken with typical seasonings that serve a side dish in Kelantan Malaysia. - 4 pcs Chicken maryland (marinated with salt and pepper)
- 4 pcs Lemongrass stems (white part only, chopped)
- 6 cloves Garlic (peeled and crushed)

- 2 cm Ginger (peeled and sliced)
- 4 pcs Shallots (peeled and sliced)
- 1/4 cup Cooking oil
- 1/2 cup Salt
- 2 tsp Sugar
- 1 cup Chicken stock
- 1 tbsp Tomato sauce
- Ground tumeric
Preheat grill to medium-high or oven to 180°C. Grill chicken for 15-20 minutes until golden (it only needs to be half cooked, as it will continue cooking in the sauce later).
Meanwhile, blend lemongrass, garlic, chilli, candle nuts, ginger, shallots and turmeric with 2 tbsp water until fine.
In a large fry pan, heat oil and sauté the blended ingredients until fragrant, stirring constantly. Season with salt and sugar.
stir in chicken stock, tomato sauce and coconut milk, then adjust seasoning if necessary.
Add the chicken to the percik sauce and spoon the sauce over the chicken. Cover with a lid and simmer for 15-20 minutes until cooked through.
